Mana Thai Comfort Food/Vegan Thai CO has been a regular staple for us since they came to Longmont! The consistency in deliciousness is unbelievable, making us question every time, "How do they do it?" We frequently order Vegan Mango Curry with Tofu, and it is incredibly flavorful, with the different textures of the cashews, mango, broccoli, and other vegetables, and tofu. The blend of these foods creates a sweet-and-savory flavor profile with a tailored spice level, making you want to keep ordering it!

If you like eggplant and other vegetables you CANNOT pass this by. I have a hard time not ordering this any time I eat here. It is a wonderful mix of veggies with a deliciously addictive sauce that you practically want to drink. I am wholeheartedly a fan of this dish I tried on a whim and will always go back to. The eggplant just melts in your mouth.
